Red Curry


  • Coconut Milk
  • Zucchini
  • Bell Peppers
  • Carrots
  • Chicken Breasts
  • Red Pepper Flakes
  • Red Curry Paste
  • Salt & Pepper
  • Cornstarch
  • Rice
  • Lemon or Lime Juice ( optional )



Cut up chicken breasts and brown with a drizzle of olive oil. While browning chop up the veggies to desired size. Add to pot. Combine coconut milk and cornstarch. Add to pot and mix. Add salt, pepper, and red pepper flakes. Stir the mixture in the pot. Add a teaspoon and a half of red curry paste and mix. Turn the heat down to simmer. Prepare rice. Pour curry over the rice and add lemon or lime juice ( if desired )
