Berry Cheesecake Crepes 1


  • Eggs
  • Milk
  • Vanilla
  • Flour
  • Salt
  • Sugar
  • Cream Cheese
  • Water
  • Lemon Juice
  • Lemon Zest
  • Blackberries
  • Raspberries
  • Blueberries



Combine eggs, milk, sugar, and vanilla in a large bowl. Gradually add in flour and mix until a smooth batter forms. Heat up a pan with a bit of butter and put 1 scoop of batter in the pan. Flip with a spatula when batter has large bubbles on top. Cook on opposite side until  edges curl up and take off heat. Repeat until all batter is used up. Combine cream cheese and sugar until combined. In a large pot heat water, lemon juice and zest, blackberries, raspberries, and blueberries. Stir until reduced by 1/2. Spread 1 tablespoon of cream cheese and berry mixture on lower half of pancake. Fold upper half of crepe over the bottom half and then fold the crepe horizontally. Sprinkle with powdered sugar. Repeat until all fillings are used up. Enjoy!
