Lemon Poppy Seed Muffins


2 3/4 sticks butter

1 1/3 cup sugar

2 lemons (juice and zest)

1/8 cup poppy seeds

3 cups flour

3 teaspoons baking powder

1/2teaspoon salt



Cream butter and sugar in stand mixer until fluffy and pale. Add lemon zest and juice. In a separate bowl, sieve the flour, baking powder, and salt. Add to lemon mixture. Once combined, add poppy seeds. Scoop into muffin pans about 3/4 full. Bake at 350 degrees for 20 minutes, or until golden brown. Serve with powdered sugar on top!
