Eton’s Mess Cupcakes



  • 1 1/2 cup flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup butter (1 stick)
  • 1 cup sugar
  • 1 tsp vanilla
  • 2 eggs
  • 1 cup milk



  • 4 egg whites
  • 1 cup sugar
  • pinch of salt
  • whipped cream
  • chopped strawberries




Mix flour, baking powder, and salt. In a separate bowl, cream butter on medium speed until light and fluffy. Reduce speed to low, and add vanilla and eggs. Add in milk and flour alternately while mixing. Pour into a lined cupcake pan. Bake at 176 degrees Celsius or 350 degrees Fahrenheit for about 30 minutes, or until a toothpick inserted comes out clean.



Beat egg whites until they hold soft peaks. Gradually add sugar and vanilla and sugar and beat until mixture is stiff and glossy. Using a knife or pastry bag, make small meringue shapes on a greased pice of parchment paper. Bake at 107 degrees Celsius or 225 degrees Fahrenheit until meringues are firm and crisp. Frost cupcakes with whipped cream, and pile on chopped strawberries and meringues. Enjoy!
