Carrot Cake


Ingredients:

Cake:

4 eggs

1 cup oil

1 cup granulated sugar

1 cup brown sugar

2 cups grated carrots

1/2 cup chopped walnuts (optional)

2 cups flour

2 tsp cinnamon

1 tsp ground ginger

1/2 tsp ground nutmeg

1 tsp baking soda

2 tsp baking powder

 

Frosting:

2 packages cream cheese

1/2 stick butter

1 cup powdered sugar

1 tsp vanilla extract

 

Directions:

Cake:

Combine eggs, oil, and sugars until combined. Add grated carrots. In a separate bowl, combine flour, cinnamon, ginger, nutmeg, baking powder, and baking soda. Combine wet and dry ingredients, and add nuts. Bake at 350 until toothpick comes out clean. Cool on wire rack.

 

Frosting:

Beat cream cheese and butter until creamy. Reduce speed, and add powdered sugar, a little bit at a time. Beat until there are no lumps. Add vanilla. Coat cake with frosting, and chill for at least 2 hours, or overnight. Enjoy!
